Heat a non-stick frying pan over a moderate heat, drizzle in the olive oil and add the salt and pepper.
Pan sear the chicken breasts for 3 to 4 minutes on each side then place the chicken breasts onto a baking tray and into a preheated oven at 180c for 10 minutes.
Heat carrot and swede mash and the lentil soup as per the recommended cooking instructions.
In a large bowl divide the carrot and swede mash between two place a chicken breast on top of the mash and spoon over the spicy lentil soup.
